Ingredients for the Vegetable souffle

1/2 a kilo spinach
100 grams rocket
3 spring onions

INGREDIENTS FOR THE BECHAMEL SAUCE

6 soup spoons vegetable butter
7 soup spoons all purpose flour
620 grams milk
1/2 a tea spoon nutmeg
200 grams kefalotyri( Greek style yellow cheese)
5 eggs ( yolks and whites)
Salt
Freshly ground pepper
Some vegetable butter and some flour for the form
